The iconic resort’s newly appointed Executive Chef has prepared an all-new menu to complement your gourmet stay in Uluwatu. Originally from Switzerland, Adrian Hauenstein has spent his career in five-star Asian restaurants in the Maldives, Cambodia and Thailand. His passion for the region’s culture, cuisines and fresh products translates into the plate. “The tasting and à la carte menu at the new CIRE combines fresh, seasonal ingredients with a simple and straightforward approach,” explains the chef.

The new menu showcases the nourishing and vibrant quality of Mediterranean cuisine with influences from Italy, Greece, Turkey, Spain, France, Morocco, and more. Working closely with local fishermen, seafood is freshly caught and delivered daily. The restaurant also proudly uses produce from the island’s artisan cheese makers and organic heirloom tomatoes from a local farmer.

In addition to the à la carte menu, customers can find a five-course tasting menu, perfect for those who wish to celebrate a special moment or simply taste the new signature selections of CIRE. Paired with cocktails or wine options, the five-course tasting menu features dishes such as tuna tartare, slow-cooked Wagyu beef short rib croquettes, seared barramundi, slow-cooked lamb with spices from the Middle Eastern and the yogurt semifreddo to finish the meal. with a sweet note.

Craft cocktails succinctly accompanied the dishes, from the aromatic forest of Salacca for the tuna to a deep concoction, Parmigiano, made with Bourbon, vermouth, Campari, black cherry liqueur and Cynar to accompany the lamb. The wine pairing features a wide range of Old and New World wines, whether it’s a Pinot Blanc from the Schlumberger estate or a full-bodied South Australian Syrah from Wolf Blass.

An à la carte menu is also available, with pasture plates to share as well as tasty entrees and desserts. The five-course tasting menu is priced at Rp 1,500,000/person (cocktail pairing) and Rp 1,900,000/person (wine pairing). Read the full menu here.
